Baba loves to cook and as he is off on his summer holidays at the moment, I am trying to encourage his cooking a little more. He gets really excited about it, and loves to get involved making decisions about what we are going to make and how to cook it.

When we were asked to buy some Cadbury chocolate from Asda through #cbias we knew that we wanted to make something that we hadn’t made before.

We firstly had a look through some of our cook books to find something that we all would like as a family and decided on a chocolate pavlova.

Having never made meringue before this was a first for all of us. But we were determined, and loved the fact that the meringue actually had chocolate in it making it a different meringue completely.

The recipe seemed simple enough and we went of to Asda to buy all of our supplies.

The first job was to make a cornflour and vanilla extract paste and then to seperate all the egg whites and whisk them all together.

This was very easy and Baba loved the whisking, he is finally getting used to this and it has taken a long time to like the whisk but he is realising the great things that it can make!

We then added grated chocolate and drinking chocolate, to make the meringue a chocolate tasting meringue.

This did leave quite a running consistency and I did think that the meringue should be thinker, but we went with the recipe and cooked it in the oven for an hour and then let it cool for an hour.

We realised that the meringue did not look very pavalova looking, it was actually flat.

So we moved to plan b, this was too change the pavalova to a chocolate eton mess.

Baba loved this idea, another excuse to get the whisk out and whizz up the cream until it was in soft peaks. We then added our chocolate buttons, our crushed flakes, and our crushed up flat meringue all into the cream and mixed really well.

We then dished this up for Mr L as he doesn’t like strawberries and drizzled melted chocolate over the mess, to add the final touch to the mixture.

For Baba and myself we added cut up strawberries to the chocolate mess, and it was a perfect mixture of chewy, creamy, chocolate, summer delight.

This is something that we would totally eat again, and we will have another go at the chocolate meringue and hope that this time it will rise rather than be a flat meringue as it really was a lovely tasting meringue.

  1. Meringue is a tricky one isn’t it? My daughter is the same about the electric whisk – she is nearly eleven but still gets nervous about using it!
